Angus-Hereford cattle, 2 years old, organically grass-fed (and grass-finished) on our pastures, rotated to fresh grass regularly. Naturally healthy, given no hormones, no antibiotics, no wormers, etc. Small herd, low stress, daily attention, our cattle come to their names. Wintered on high quality local organic hay. Born, raised, and professionally slaughtered on our family farm, when the early summer grass is still lush and cattle are still on the gain, for the best quality meat.
Delicious, tender, lean, real beef flavor. Lower in cholesterol, higher in good omega-3 fatty acids.
Dry aged 2 weeks for extra tenderness. Professionally cut & wrapped to your orders at our favorite local USDA certified butcher. $4.00/lb hanging weight ($3.50/ lb for a half). Last year’s quarters weighed 170-190 lb. That finishes to about 4 cubic feet of beef, plus marrow bones, organs, suet if you like (no extra charge). Each quarter has equal shares of front and rear.
